Where Culture Meets Resistance: Celebrating the Work of Black Women Chefs
Editor’s Note
Every season carries its own rituals. For us, autumn opens with both a return to the table and a return to the stories behind it. This week, we celebrate the women whose cooking is more than craft—it is resistance, reclamation, and remembrance.
Black women chefs are reshaping the definition of luxury, not through extravagance but through heritage and resilience. Their food is layered with ancestry, rooted in justice, and plated with quiet brilliance.
Part One: The Gathering at Spelman
In April, Food Tank partnered with Spelman College for the 2025 Food Justice Summit: Stirring Up Home: Black Women Chefs Reframing Cultural Food Traditions as Resistance and Reclamation Work foodtank.com.
At the center were chefs, educators, and authors including Andrea Blanton, Erika Council (Bomb Biscuits), Deborah VanTrece, and Chef Za of Zaza’s Kitchen. Together, they framed food as both art and activism—reminding us that a recipe can preserve culture just as powerfully as a written archive.
“Food is our text, our memory, our map,” one panelist noted. “When we stir gumbo, fry chicken, or bake biscuits, we are carrying history into the present.”
Part Two: Luxury Reimagined
In the fine-dining world, luxury is too often equated with rarity. Yet these chefs propose a different vision: that the true indulgence is cultural continuity.
- Erika Council honors her grandmother’s Southern biscuit recipes at Bomb Biscuits, turning a humble staple into a delicacy that connects Atlanta diners to generations past.
- Deborah VanTrece elevates Black Southern cuisine with global accents, creating menus where fried chicken meets lavender honey or collard greens pair with coconut curry.
Luxury here is not ostentation—it is a plate that carries legacy forward.
Pairings & Rituals for the Season
Inspired by their work, we suggest:
- Bread & Brine: A plate of Southern biscuits paired with oysters—one from land, one from sea—served with Champagne.
- Spiced Cocktails: Bourbon with clove and orange peel, echoing diasporic spice routes.
Sweet Notes: Pecan pie reimagined with cardamom and saffron, bridging Southern roots and global luxury.
BIPOC Highlight of the Week
Atlanta’s Bomb Biscuits bakery (Erika Council) is redefining breakfast and brunch with Southern heritage at its heart. Her biscuits—layered, flaky, unapologetically rooted in tradition—are proof that memory itself can be luxury.
